Peanuts

Despite its name and appearance, the peanut is not actually a nut, but is rather a legume. The peanut became widely consumed in the United States in the late 19th and 20th centuries on plantations, particularly because of a U.S. Department of Agriculture program spearheaded by George Washington Carver. The peanut is a nutrient-rich super soul food, containing over 30 essential nutrients such as niacin, folate, magnesium, vitamin E, and phosphorous. This legume is often used by the World Health Organization to fight malnutrition in developing countries because of its extremely high concentrations of protein, energy, and nutrients. Its nutritional value and sustenance are clear reasons the peanut was valued among African Americans during slavery.

HEALTHY RECIPE FOR PEANUT BUTTER

 

We found a wonderful low calorie recipe to create homemade peanut butter. It was found at Sparkpeople.com which is the worlds largest website for healthy recipes!



Ingredients

2 cups unsalted, roasted shelled peanuts

1 tablespoon peanut oil

1/2 teaspoon salt (optional)

*You can also add honey, ginger cinnamon, or brown sugar to your taste*



Instructions

1. Place all ingredients in blender or food processor. Blend until desired texture is reached.

2. Place in airtight container and refrigerate unused portion.

Makes 8 (2 tablespoon) servings.
